Spritz cookies have been a holiday staple in my house for as long as I can remember, and I wasn’t about to let being #GlutenFree and #CornFree stop me from enjoying them this year! Here’s my GF Spritz cookie recipe that tastes EXACTLY the same!
This is a wonderful, slightly sweet, filling side dish! It goes fantastically with chicken, and packs a great flavor into any meal. It’s also a great way to get more color on the plate.

With my appointment fast approaching to get my LEAP results, Dan and I decided to make some “guesses” as to which foods will be “no good!” It will be really interesting to see which of these predictions end up coming true!
My February appointment with the dietitian was quite productive. The low FODMAP diet didn’t work, so we are now switching things up! It’s going to be a monumental task, but it should help dramatically.
